記得學習WSET課程時,導師教授德國白葡萄酒的甜度分級制。當時我品嚐了不同甜度等級的Riesling (雷司令),形成了「Riesling一定是甜的」的固有印象。

隨著葡萄酒資歷日漸增長,越來越多新嘗試。我於2017年8月有幸參觀位於南澳洲Port Lincoln小島的oyster farm(生蠔養殖場)。場主一邊教我們親自動手開蠔,場主夫人一邊把澳洲Riesling倒入我們的酒杯。淺嘗後,詫異竟然是酸的!場主說: 「Dry Riesling (不甜的雷司令)是生蠔的恩物!」然後大家急不及待地一口生蠔、一啖酒。巧妙地,冰涼清爽、果味純淨的酸Riesling沖淡了生蠔濃烈的海腥味。在口中,只剩下一顆富有大海味、礦物味、鮮嫩多汁的「完美生蠔」。

當時就是飲這一瓶果味純淨、個性清爽的Dry Riesling。(tripadvisor)
